Sunbutter Banana Chocolate Chip Cookies

These Sunbutter banana chocolate chip cookies are a healthy vegan and nut free snack made with no refined sugars!
  • 2 small to medium very ripe bananas
  • 2 tsp melted coconut oil
  • 1 tbsp ground flax
  • 3 tbsp water
  • ¼ cup Sunbutter
  • ½ tsp vanilla
  • 1.2 tsp cinnamon
  • 1.5 cups rolled oats (not quick oats)
  • 1 tsp baking powder
  • 2 tbsp maple syrup
  • ¼ cup dried cranberries
  • 2 tbsp mini chocolate chips
  1. Preheat oven to 375°F.
  2. In a small dish or ramekin, mix together the ground flax with water and set aside.
  3. Then mash the bananas well, and mix in the coconut oil, Sunbutter, vanilla, cinnamon, and flax mixture. Stir in the oats, baking powder, maple syurp, cranberries and chocolate chips next.
  4. Using a spoon and wet fingers, shape into 12 small cookies and place on a baking sheet lined with parchment paper.
  5. Bake in the 375°F oven for 10 minutes, then remove and let cool.
*If your bananas aren't extremely ripe and you prefer a slightly sweeter cookie, feel free to add some additional maple syrup
