Fall Vegetable Recipes I’m Loving

There’s something about fall that just makes me feel like cooking.

The darker evenings are so inviting for staying indoors, putting on my cozy clothes after work, and standing in front of the stove to A) cook dinner and B) warm myself up. Fall vegetables have been the stars of many of our dinners lately, as they lend themselves so well to comfort food. I know “comfort food” and “vegetables” aren’t usually seen as compatible terms, but I think they go hand in hand perfectly. Starchy potatoes, sweet and creamy squash, roasted root vegetables that caramelize in the oven… tell me those aren’t pure comfort!

  1. Haha, true that veggies are not often thought of as comfort food, but the way you describe them might change people’s minds! I will definitely have to try that kale brussels sprout slaw — I’ve been looking for a recipe to combine those two for a potluck coming up, and that looks awesome!

  3. Yum round-up!! I can’t get enough of the squash variety during fall- roasted butter nut squash with cinnamon & nut butter is just perfection!

  4. I love some of the fall vegetables: carrots, kale, potatoes, POTATOES (did I say that already), sweet potatoes, Brussels sprouts….the squash on the other hand, I’m learning to love. This post helps.
