These Sunbutter banana chocolate chip cookies are a healthy vegan and nut free snack made with no refined sugars!
Sometimes I feel like a fraud.
I mean, I write a food blog and I teach healthy cooking classes for my job so I feel like I should know everything when it comes to the culinary arts. But I most definitely do not.
Grilling? Nope, no idea. Every time I attempt it I end up with blackened meat. And not the edible kind of blackened.
Artichokes? I stick to the jarred kind because I don’t even know the first thing about preparing the fresh kind.
Homemade meringue? I failed at beating egg whites to stiff peaks FOUR times in my second year university food lab. I gave up for good after that.
I also suck at baking. Unless I follow a recipe to a tee, you can pretty much be guaranteed that my baked good will have some sort of major flaw. Turd-like muffins (according to my dad), flat Irish soda bread, cookies that melt into a giant sheet pan cookie… I’ve done it all. You’d think that taking a course in food science in university and marathoning Alton Brown’s Good Eats would at least make me somewhat baking savvy, but apparently not.
Okay so after confessing my utter lack of skills in the baking department, you’re probably wondering why the heck I’m posting a cookie recipe today. But hear me out. This recipe barely counts as baking because it’s so easy. And because I didn’t jinx myself by calling it baking, these Sunbutter banana chocolate chip cookies actually turned out great!
They’re an oat based cookie with my latest favourite dried cranberries and of course chocolate chips. I bound them together with a mixture of mashed ripe banana and sunflower seed butter and added just a touch of maple syrup for sweetness. All these wholesome ingredients make these a great healthy everyday cookie! Or should I call them a non-cookie just to make sure I don’t jinx myself?
- 2 small to medium very ripe bananas
- 2 tsp melted coconut oil
- 1 tbsp ground flax
- 3 tbsp water
- ¼ cup Sunbutter
- ½ tsp vanilla
- 1.2 tsp cinnamon
- 1.5 cups rolled oats (not quick oats)
- 1 tsp baking powder
- 2 tbsp maple syrup
- ¼ cup dried cranberries
- 2 tbsp mini chocolate chips
- Preheat oven to 375°F.
- In a small dish or ramekin, mix together the ground flax with water and set aside.
- Then mash the bananas well, and mix in the coconut oil, Sunbutter, vanilla, cinnamon, and flax mixture. Stir in the oats, baking powder, maple syurp, cranberries and chocolate chips next.
- Using a spoon and wet fingers, shape into 12 small cookies and place on a baking sheet lined with parchment paper.
- Bake in the 375°F oven for 10 minutes, then remove and let cool.
