Lemon soy grilled tofu

Sometimes I think we have a tendency to over-complicate healthy eating.

We tend to think we need to spend all our time in the kitchen making raw dehydrated kale chips and homemade almond milk in order to be healthy, which is not the case at all. Making elaborate foods can be fun, but certainly not necessary. And if you’re pressed for time, sometimes simple is the way to go.

In fact some of my favourite foods are ridiculously simple: oatmeal with banana and almond butter, baked sweet potatoes, pan fried salmon with lemon and parsley, roasted root vegetables, and this lemon soy grilled tofu:

With only 3 ingredients total, it’s a delicious way to prepare tofu that won’t eat up 60 minutes of your day while you combine 1393929 different marinade ingredients. Ain’t nobody got time for that!

Super easy and flavourful tofu recipe that requires only 3 ingredients! Vegan, gluten free, nut free.
Yield: 1-2 servings
  • Half 1-lb block of extra firm tofu
  • ½ cup fresh squeezed lemon juice
  • 1 tbsp soy sauce
  • 3 tbsp chopped parsley (optional)
  1. Combine lemon juice and soy sauce in a shallow dish.
  2. Press water out of tofu then cut into triangles. Place in marinade and let sit for 15 minutes. Then flip it over and let sit for another 10-15 minutes.
  3. Cook on a preheated grill until grill marks appear on each side. If you don't have a grill, pan fry in ½ tbsp oil until golden.

I like to eat this tofu with a side of brown rice (cooked in a batch ahead of time!) and vegetables. Or if I’m feeling fancy, it tastes awesome on top of a rice bowl.

This one contains lemon soy grilled tofu, brown rice, kale massaged with avocado + lemon + salt, shredded carrots, avocado, a scoop of hummus, lemon tahini sauce, and parsley – it’s one of my favourites!

  3. i love using lemon juice as part of a marinade, the flavors are always so fresh and on point.

  4. I’m a fan of simplicity too! All my meals take less than 30 minutes to make and I like that I can go to the grocery store each week without a list because I know the foods and ingredients that I’ll end up using each week! Parsley and lemon taste so good together and grilled tofu is DELICIOUS. I love the texture it gets when it’s grilled! I have had it in restaurants before and it’s always cooked perfectly. Haven’t been able to exactly recreate it on my own, but I’ll have to try your recipe!!

  5. Flounder en papillote is by far my favorite simple dinner. Lay julienne vegetables, on a piece of parchment paper, lay a flounder filet on top, season with salt and pepper and lay a couple lemon slices atop the fish. Crimp the parchment paper and throw in the oven for 25 minutes! Always moist and so flavorful.

  6. So easy! I think my favourite easy recipe is overnight oats. They take 30 seconds and are sooooo gooooddd!!

  7. You certainly won’t find me dehydrating kale chips or making my own almond milk ;-) Love how simple this is! My favourite easy healthy recipe has to be spinach salad with eggs, squash and maybe some avocado. So simple it doesn’t even really count as a recipe. I haven’t had tofu in ages…I’ll have to pick some up soon!

  8. Sometimes simple is better! Oats are probably the easiest recipe I make, but you know me I like a good kitchen challenge ;)

  9. I’m definitely not a fan of complicated recipes. Honestly, if I come across a recipe that has too many ingredients or steps, I usually won’t bother with it… no matter how good it looks. I don’t mind cooking something more complicated for special occasions, but simplicity is where it’s at on a daily basis. And for the simplest meals? Probably a stir fry or scrambled eggs.

      I’m the same way. I pin a lot of recipes with lots of steps/ingredients, but I have to be feeling highly motivated to actually make those recipes haha.

  10. I am so pumped you posted this because I needed a new tofu recipe! A super easy healthy recipe is probably my standard evening meal- protein + starch and veg. Simple, easy, delicious.

  12. I love simple and easy, especially in school. This is the perfect example how a favorite base can add so much variety because there are so many ways to consume it!

      Exactly! I’ve eaten this tofu with rice bowls, salads, on sandwiches… it works multiple ways! Which is nice when cooking for one because it prevents boredom with leftovers.
