I. Homemade sauerkraut – I’ve always been scared of making fermented foods, but recently I made my first batch of sauerkraut (and didn’t poison myself)! For a first try this turned out great, but I still want to experiment with my technique and length of the fermenting period. I may do a post on it in the future if you guys are interested.
II. Pumpkin oatmeal – It’s baaaaack! Now that it’s starting to feel like fall (with the exception of the two insanely hot days this week), pumpkin is going to be making frequent appearances in my meals and snacks. Pumpkin oatmeal is one of my favourite ways to eat it, especially with some banana sliced into it while cooking and a big scoop of almond butter on top.
III. The Good Bean Bars – Because of my nut allergy, it’s so hard to find healthy packaged granola bars! Most are filled with processed ingredients and contain very little in the way of actual nutrition. Luckily I discovered The Good Bean Bars last summer. They’re gluten free, vegan, and best of all, nut free! They also have 5 g of fibre and 5 g of protein per bar, so they’re pretty filling. They’ve been a perfect snack to get me through the afternoons at my internship!
IV. Squeezing in workouts – Being a dietetic intern means very little time for anything else. Working out, cooking, socializing, reading, and my sleeping have all suffered in the past two weeks. So instead of putting pressure on myself to do it all, I’ve adopted the outlook of “do what I can”, especially when it comes to workouts. On Wednesday I was out of the house from 8 am until 9 pm, leaving no time for the gym. So I woke up at 5:30 and did 20 minutes of my new Jillian Michaels’ 30 Day Shred DVD. It wasn’t much, but at least it was something.
V. The Healthy Living Summit – Today after a full day review session on parenteral nutrition and refeeding syndrome at the hospital, I’ll be heading straight to the airport to catch an 8:30 pm flight to Minneapolis for the Healthy Living Summit! I went to last year’s summit in Boston and had such a blast. There’s going to be a different crowd at this year’s though, so I’m really excited to meet some new faces (and see some old friends too), learn some new tips about blogging, and explore the city.
