I have a recipe to share today! But first I have a story about the night I stayed up until sunrise.
It was when I was 18, on a vacation in Cuba, and having the time of my life with my friend Angela while our moms were off sleeping cluelessly in their hotel room. The night started at the resort bar and ended with watching the sunrise on the beach after a night of adventures with some new friends.
Somewhere around 3 am we were we playing around in the pool and chatting with our favourite bartender, who told us he was going to make us “something special”. A few minutes later he brought us out what he called the Chunky Monkey – a combination of chocolate, banana, and alcohol that tasted just like a milkshake!
I had that drink in mind when I made this breakfast of chunky monkey overnight oats. Don’t worry – it’s non-alcoholic!
- ⅓ cup rolled oats
- ⅓ cup low fat milk
- 2 tbsp cottage cheese
- 2 tbsp vanilla Greek yogurt
- 1-2 tsp cocoa powder
- 1 tsp chia seeds
- 1 banana
- In a bowl mix together the oats, milk, cottage cheese, Greek yogurt, cocoa powder, chia seeds, and half the banana. Stir together and let sit overnight in the fridge.
- In the morning stir in the rest of the sliced banana and add your toppings.
