I have a recipe to share today! But first I have a story about the night I stayed up until sunrise.

It was when I was 18, on a vacation in Cuba, and having the time of my life with my friend Angela while our moms were off sleeping cluelessly in their hotel room. The night started at the resort bar and ended with watching the sunrise on the beach after a night of adventures with some new friends.

Somewhere around 3 am we were we playing around in the pool and chatting with our favourite bartender, who told us he was going to make us “something special”. A few minutes later he brought us out what he called the Chunky Monkey – a combination of chocolate, banana, and alcohol that tasted just like a milkshake!

I had that drink in mind when I made this breakfast of chunky monkey overnight oats. Don’t worry – it’s non-alcoholic!

Chocolate banana overnight oatmeal that doesn't require cooking - just mix together the night before and enjoy in the morning!
Yield: 1 serving
  • ⅓ cup rolled oats
  • ⅓ cup low fat milk
  • 2 tbsp cottage cheese
  • 2 tbsp vanilla Greek yogurt
  • 1-2 tsp cocoa powder
  • 1 tsp chia seeds
  • 1 banana
  1. In a bowl mix together the oats, milk, cottage cheese, Greek yogurt, cocoa powder, chia seeds, and half the banana. Stir together and let sit overnight in the fridge.
  2. In the morning stir in the rest of the sliced banana and add your toppings.
If you're using plain Greek yogurt, you might want to add ½ - 1 tsp of honey or maple syrup to sweeten it!

  3. Mmm, this might be the best looking bowl of overnight oats I've ever seen! I absolutely love "Chunky Monkey" anything–especially the ice cream–but I've never tried it in cocktail form. Yum. And I'm guessing deceptively dangerous? ;) I'm guessing that your version is much more satiating, and I know that it's healthier!I've stayed up till sunrise several times for fun, and a few too many times for school. :-p Watching the sun wake up is one of the most beautiful scenes!   4. Mmm what a great combination of ingredients here for overnight oats! I used to hate anything "chunky monkey" because I didn't like bananas… but my taste buds have changed since then for the better :)That is too fun about that trip!

  6. YUM!! Chunky monkey oats sound SO GOOD!! I've definitely had my share of stay up to sunrise days! I'm usually worthless the next day. And as I get older, I go to bed earlier and earlier. I'm not even 30 and I'm basically a grandma. Ha!

And the oats look pretty good too :) I've had my share of staying-up-til-sunrise…but not anymore, because I'm an old lady now and my old body/brain can't handle it anymore! I swear, I used to be able to be fine with just a few hours sleep. Not anymore! Favorite cocktail? Hmmm… probably a Pineapple Chilli Marg from my favorite bar back home :)

You can never go wrong with the combination of chocolate and bananas :D These oats sound fantastic… and make me miss my oatmeal :(I've actually stayed up until sunrise more times than I care to admit. I remember countless summer days of driving home after a night out when the sun was already starting to rise. Crazy how times have changed. These days I still see the sunrise, but it's because I wake up so dang early lol.

  11. I swear, vacations are the best place to discover new drinks. In Mexico in May I discovered how awesome Grasshoppers and Mudslides are. :-)And does working nights count for staying up to see the sunrise? Cause I was doing a lot of that last spring. :-p

Your oatmeal concoction sounds delish so I might have to try it. Did you ever have Chunky Monkey Brownies? I remember baking some a few years ago – they were topped with dried banana, unsweetened coconut and chocolate chips.

  15. My favourite cocktail?! How can I choose….oh boy…I'd have to say I like a simple vodka with soda water and a hint of lime or lemon juice. Easy and bitter, I hate sweet cocktails.This sounds super delicious! Chocolate and banana is one of the best combos out there!
