Ever since the beginning of August, my family has been bringing home 3L baskets of peaches from the farmer’s market every week. There’s nothing like local peaches at this time of year!
One of my favourite ways to enjoy fruit is in breakfast, so of course I had to try adding some peaches to my morning bowl of oatmeal. The result was delicious!
- ½ cup of rolled oats
- 1 cup of water
- ⅓ cup of almond milk
- ½ banana, thinly sliced
- 1 tsp chia seeds
- ½ tsp vanilla extract
- 1 ripe peach, chopped
- ¼ cup of almond milk
- 2 tbsp granola
- 1 tsp unsweetened shredded coconut
- Bring water to a boil then add the oats and reduce heat.
- Add in the almond milk, thinly sliced banana, chia seeds and vanilla then let cook until thick, stirring occasionally. Stir in half of the chopped peach at the last minute, then transfer to your bowl.
- Pour in cold almond milk on top and top with the other half of the chopped peach, granola, and coconut.
The extra pour of almond milk on top was key. I loved the cool, milky flavour combined with the peaches!
