Mango goji coconut oatmeal

Oatmeal isn’t exactly known for being a summer food. When I think of oatmeal I think of cozying up to a warm bowl filled with the flavours of apple and cinnamon while it snows softly outside. Or enjoying a bowl of pumpkin oatmeal in the fall before bundling up in layers to go on a fall hike.

But I still like to enjoy oatmeal in the summers – it’s all about switching up the flavours! Instead of apples or pumpkin, I’ll use more summery flavours like berries, cherries, peaches, mango, banana, etc. This is mango goji coconut oatmeal is one of my favourite summery bowls of oatmeal lately:

Mango goji coconut oatmeal

Mango goji coconut oatmeal | Vegan, nut free option*

Serves 1

1/3 cup oats
2/3 cup water
2-3 tbsp almond milk
2 tsp chia seeds
1/4 of a banana, sliced
1/4 tsp cinnamon
1/2 cup chopped mango, banana, and raspberries
2 tbsp store bought or homemade granola
1 tbsp goji berries
2 tsp shredded coconut
1 tbsp sunflower seed butter

*Note: to make nut free use cow’s milk or soy milk, and use a nut-free granola.

In a small pot bring 2/3 cup water to a boil and add 1/3 cup of rolled oats. Reduce heat to low and add milk, chia seeds, thinly sliced banana, and cinnamon. Cook until it has thickened, then scoop into a bowl.

Top with chopped mango, banana slices, and raspberries, Kashi cereal, goji berries, shredded coconut, and sunflower seed butter.

  1. I've been loving mango lately too, although I usually have mine at lunch as part of my post-workout smoothie. Which is actually another thing that I've been loving lately – strength training. I used to be all about the cardio, but for about a month now I've been doing way more strength training and omigosh I'm in LOVE. I love the results I'm seeing, and how much stronger it makes me feel. Smitten. I've also been loving reading, sunshine, listening to rain as I fall asleep, breakfast three times a day, and apartment shopping. Although that last one is kind of a love/hate thing lol.

  2. Lately I've also been loving feta and olives! Actually anything greek salad related. I love adding dried fruit to that combo as well for a sweet and salty flavor. I'm loving baking too right now since I finally diminished the amount of baked goods that were taking over my freezer. I seriously can not get enough muffins!

  3. mmm mango! so tropical! i've been loving long conversations with my sister, chocolate, and bowls upon bowls of cold cereal with frozen bananas!

  11. I love making batches of burgers to save for quick meals, too :)And raspberries off the bushes…I don't think I could ever work on a farm for that reason. I'd just eat all the fruit! lol

  15. there is nothing wrong with eating the same thing for dinner 3 nights in a row, especially when it's a yummy black bean burger salad. seriously. salads and veggie burgers were made for each other, especially in the summer. i'm loving purple sweet potatoes, coconut cream, and strawberries lately. oh, and of course the usual broccoli, cauliflower, and brussels sprouts. there's nothing better than cauliflower picked right before your eyes!

  16. I love mangos 3 meals a day. Eating Well magazine has this recipe for lentil and mango dal that is unreal!
